Burton Water Salts are made up of Gypsum and Papain. Papain is used to prevent chill haze. Gypsum helps harden purified or soft water used for brewing, aids in establishing proper pH in brewing water, and provides sufficient calcium ions essential for enzyme function, kettle protein coagulation, and yeast metabolism.
